Sample Recipe:

LISA & JOANNE'S FAVOURITE EASY GOURMET SALAD

This recipe appears to have many ingredients, but the key items are sunflower seeds, olive oil and balsamic vinegar. The rest are optional:

-3 cups of any dark leafy green lettuce (e.g., romaine, spinach, kale…or mixed)

-½ cup sunflower seeds -1 tbsp. extra-virgin cold-pressed olive oil
-2 tbsp. balsamic vinegar -1 tbsp. garlic-infused flax seed oil
-1 tsp. flax seeds (optional) -1 tsp. sesame seeds (optional)
-freshly ground black pepper

1. Lightly toast sunflower seeds in a toaster oven or in a pan over medium heat on the stove.

2. Combine oils and vinegar in a glass or small bottle.

3. Chop lettuce. Place in large bowl.
4. Pour the dressing over the lettuce. Sprinkle the nori flakes, sesame seeds and flax seeds over the lettuce. Mix well.

5. Toss the sunflower seeds and pepper on top.

To make this salad a main course, add roasted red peppers and chévre (goat cheese). Yum!

Testimonials:

"I just wanted you to know that I read your cookbook this morning, and I can't believe how unhealthy today's eating trends have made and continue to make everyone. Looking back to growing up in the late 50's and 60's our habits have changed so much. I really feel sorry for this generation including my own kids. I can't stop them from the constant abuse, they prefer it. I have a lot of bad habits but I do know the difference. I don't know yet which of these recipes can be incorporated into our business, but after I make up a few of them I'll have a better idea. Salads are most popular in summer, so maybe that would be a start. I know a lot of people who would be interested in presentation of this book. "

"I am gradually making my way through all of the recipes and am enjoying them. I let my neighbour across the hall try some of your waldorf rice with the
lentils and spinach. She took it to work for lunch, loved it and even let
another nurse try it who also loved it. My neighbour is interested in
buying the book (I will be showing it to her today)."
